Smoky Puy Lentils in Soft Shell Tacos with Rainbow Toppings

Lentil filling:

  • 2 cups of black puy lentils (pre-cooked)
  • 3 cups of good quality tomato sauce
  • 1 red onion, chopped
  • 2 garlic cloves, chopped
  • ½ bar of Ombar 90% Cacao
  • 2 tbs of olive oil
  • Salt and pepper to taste


  • 2 - 4 taco shells
  • 1 avocado, sliced
  • 1/2 tomato, chopped
  • 1 lime, sliced
  • Slices of red onion
  • Handful of rocket
  • 1 tsp of black sesame seeds
  • 2 tbs of plant-based sour cream (soy or oats or any other)

    In a hot pan add olive oil, chopped red onion, garlic and let them gently soften. Once soft add your Puy lentils and the tomato sauce, mix well and let it cook and combine for 10 minutes.

    Just as your mixture is combining add half a 90% Ombar and mix until it has melted. Add salt and pepper to taste.

    Now to put this beautiful plate together: start preparing your toppings by first finely slicing your avocado, and then your onion and tomato.

  • 4.

    In a bowl add your beautiful smoky puy lentil mix, dress with the avocado, sliced onions and lastly tomatoes. Sprinkle some rocket on the top for show, sprinkles of black sesame seed on the avocado, dollops of sour cream, and last but not least your soft tortillas that you can either chop in four pieces or arrange at the bottom.
