Pistachio Ice Cream

For the Ice Cream

  • 400g water
  • 100g creamed coconut
  • 120g coconut sugar
  • 350g pistachio paste (we use Italian pistachio paste as it’s the best!)
  • Pinch of salt


  • 35g Ombar Centres Pistachio
  • Chopped Pistachios


  • 1.

    Add the water and creamed coconut into a food blender and blend for 1 min.

    Once the mixture has combined, add the coconut sugar and blend until smooth.

  • 3.

    Finally, add the pistachio paste and blend for another 2 minutes until all of the mixture has combined and is smooth.

  • 4.

    Also, add a pinch of salt at the end which will help enhance the pistachio flavour. (If the mixture looks slightly too thick, you can always add a splash of water to thin it out).

  • 5.

    Once mixture is all combined, add the liquid into an ice cream maker and mix for approx. 40 mins until it is an ice cream consistency.

  • 6.

    Melt half of your Ombar and chop the other half into chunks. Drizzle the melted choc over the ice cream and scatter the chunks, plus the chopped pistachios, over the top. Enjoy!
